This classic sheep’s milk cheese is produced in the area around Siena in Tuscany. It is aged for around 3 months. The firm texture is enhanced by the rich, nuttiness and a lingering flavor of butterscotch. Shave it over grilled artichokes and a squeeze of lemon. Very wine friendly.
